I'm going to go ahead and add the FABULOUS HOT & SPICY BLACK PEPPER we have here in Senegal as well. You can't have salt and not use pepper! But Imagine PURE PEPPER... no sticks, branches or fillers ground up inside like the cheapo .99 cent pepper from the Dollar Store!
9 kinds of PEPPER: African Peppercorns, African Black Pepper POWDER, Negro Pepper, also called Uda (Nigeria/Ghana for Pepper Stew) and called Diar here in Senega and we also have UDA POWDER which is something most people/vendors don't sell. Powder form is obviously more convenient to use! Lemon/Lime infused Pepper, African Bird Pepper, aka Red Chili peppers (seeds), but it's native to Senegal, it's not Mexican, it's West African with a smoky heat. There's also a very popular HOT SAUCE made from African Bird Pepper for the Dr Sebi folks that like heat on their food but Tabasco isn't on the list!

YOU NEED:
2 teaspoons SenegalStlye African Pink Lake (fine) sea salt (sample $5.50)
2 teaspoons African Bird Pepper powder (sample $5.50)
2 teaspoons dried nonGMO Senegalese Oregano
1 tablespoon Senegalese garlic powder
1 tablespoon Senegalese smoked paprika
1 teaspoon nonGMO Thyme powder
1 teaspoon African black peppercorn powder pepper (sample $5.50)
1/2 tablespoon Moringa powder (I put Moringa in everything!) (sample $5.50)
Instructions
Simply put everything in a jar and shake. Make sure it's got a good top and is airtight. REAL nonGMO Garlic powder will make it clump up over time if any moisture gets in it. Sometimes I miss chemicals! lol! If your garlic lasts forever and a day, there's a chemical inside.
Garlic here in Senegal is local, dried, then pulverized as is, no chemicals. I used to have Lupus when I lived in the US but within a year ALL my symptoms disappeared when I moved to Africa/Senegal and started using only local products, no imports, particularly the herbs & spices.
HISTORICAL INFORMATION SIDE NOTE: Many enslaved Africans from this region ended up in Louisiana, brought by the FRENCH and freed or sold during the Louisiana Purchase. Their cooking styles was a mix of African and French back then, just as it is today. We have Beignets, Gumbo (called Soupakanja here but w/out pork), and many other local items that are the same or similar to New Orleans food! There is a STRONG FRENCH CONNECTION between the capital city where I live (Dakar, Senegal) and New Orleans. The Jazz clubs here are to DIE FOR! If you close your eyes, actually, you don't even have to, when you step in a Jazz club in Senegal the musicians are playing a LOT of New Orleans/American jazz. It's amazing!
I also mentioned adding our nonGMO Moringa to the mixture as well. Here's a video with the health benefits of Moringa - if you don't know, now you'll know. Moringa is an AMAZING HERB/TREE and it grows WILD here in Senegal, nonGMO and for the Dr Sebi folks NON HYBRID, it's the ORIGINAL! & Pesticide Free!

Understand this: Our pepper doesn't come from China, it's not an import and it's grown and used here in Senegal. All we get are peppercorns - from that we make the pepper ourselves! See Pictures 25 & 26. It has NO fillers, NO sticks, NO dust, NOTHING... and it's not made in a lab or coming from GMO grow farms!
Pepper in the US or from the 99 cent stores aren't PURE - they put the pepper inside but they also put in fillers. We all know that right? Well IMAGINE PURE PEPPER...
We have FRESH PEPPERCORNS and African Bird Pepper in every shop and boutique in the country. They are hand pounded in a pestle and used in a medium grain texture, so you can see the black & red pieces in EVERY MEAL!
For powered pepper we use the same peppercorns and pulverize them by hand as well and use as a normal spice in seasoning and cooking.
Another pepper and MOST UNIQUE of them all is called 'NEGRO PEPPER' or Diar here in Senegal, also called Senegalese pepper. The scientific name is 'xylopia aethiopica' and it's a very specific type of pepper used in West Africa.
Remember the word 'Negro' means just means 'black' in other languages so don't think using the word is offensive when talking about our AfricanHerbal Negro Pepper. In Nigeria & Ghana it's called Uda and this is what's used to make their famous Pepper Stew. Their Jollof Rice is not as good as the Senegalese/ Gambian Thebogin but both our Senegalese Sea Salt and Peppercorn Pepper is used liberally in making this national dish as well. Of course, Jollof rice originated in Senegal soooo there's that. (hahahaha Nigerian friends! lol!)
There's lots of health benefits to using Negro Pepper/Uda as well and personally, (well, me and everyone else in the country) put it in with hot tea or coffee as it brews to get it's healing properties as well as give our beverages a bit of a kick! (pictures 31-39). In whole sticks or powder form, I've heard it compared to chicory. The powder I use in cooking for floured batters or stews and the sticks I use in hot drinks/making iced tea.

'THIS SALT IS SO GREAT, I'M WRITING MY REVIEW IN ALL CAPS!!! Seriously, there is something about this nice and delectable lake salt that makes cooking pop and adds a bouquet of rich and multi-faceted flavors. Due to COVID, my order took about a month to arrive, but the wait was absolutely worth it. The salt was completely intact and vibrantly fresh when opening it's very secured package and smelled piquant and bold, as compared to the chemical scent from regular table salt. I've tried more than a couple of generous dashes on my dinner last night, and the difference between this salt and regular iodized is like night and day. There is almost a woodsy aroma along with an umami-like flavor to it! The seller even gave a sample of negro pepper that took my mum's Chinese cooking to another level. A++! Wow!'

Sea Salt is in AFRICA, Senegal specifically and it's our little 'West African Secre't that
salt companies from OTHER COUNTRIES (like Israel!) actually BUY OUR SALT & SELL IT AS THEIRS because it's Halal/Kosher!
Lake Retba is the real name (google it) aka Lake Rose or Pink Lake is located in the capital city of Dakar, Senegal. Senegal isn't as well known as Pakistan, we know of Pakistan from the news with Osama bin Laden and wars, etc but Himalayan 'sea salt' actually comes from the mountains, not the sea and salt is white, not pink. When salt sits in the sun it gets bleached white by the elements and unless you ADD PINK FOOD COLORING IT'S NOT GOING TO STAY PINK.
That's why you can't keep Himalayan salt in the sun or it fades... ijs
They had people convinced for YEARS that 'Himalayan Sea Salt' was from the ocean but that's actually a MOUNTAIN RANGE IN PAKISTAN right?
Now when you do a google search it says mountains, before, it was the sea. I remember laughing at my mother buying 'sea salt' from the mountains of Pakistan! Maybe it's just me but it's a bit sketch that NOW they are saying it's mountain salt since they've been publicly outed by a major news networks back in the day. (60 Minutes)
We're more honest about our salt:
The LAKE IS PINK, the SALT IS WHITE - END OF STORY!
But after the video we got more orders than we could handle and we ran out of salt! lol! For real! Now we have SOME but not as much as we used to (see salt MOUNTAINS in the video!) But that's a good thing, not bad. AS LONG AS the Atlantic Ocean (a real sea!) has salt, so will Senegal!
What's interesting about the region is this: There are FOUR different ecosystems in this one area where the salt mining is done:
The Atlantic Ocean that feeds the lake
The Sahara Desert BETWEEN the Atlantic Ocean and the lake. It acts as a filter
A small tropical strip in the middle of that, with palm trees and grass, so it looks like an Oasis
And last but not least, PINK LAKE!

Arrived before expected and was packaged beautifully. We were so excited, and even kept the stamps. It's an amazing feeling to know that we have something all the way from Senegal, Africa. We use this as an extra topping for nice home-cooked meals and it adds a nice flare to it different than other spices / salts!
